Almond Joy Quinoa Bark

You guys. YOU GUYS. This dessert not only boasts powerful nutritional value, but is proven to disappear at parties in record time. Crunchy, sweet, savory, with a flavor toss up between an Almond Joy bar and a cold Samoas cookie - yet sneakily healthy, protein-packed, and fiber-friendly. Munch on this bark guilt-free morning, noon, and night–Treat, Yo, Self.

Almond Joy Quinoa Bark

Ingredients:

1/2 cup uncooked Quinoa

3/4 cup Almonds, roughly chopped

1/2 cup Dark Chocolate of choice*

1/4 cup Rolled Oats

2 Tbsp Chia Seeds

2 Tbsp Coconut Sugar

2 Tbsp Coconut Oil

1/2 cup Maple Syrup

1/2 cup Coconut Flakes

Pinch Sea Salt

 

*I used dark baking chocolate chunks for easily melting and setting. Chips, bars, milk, dark–all great choices!

 

Instructions:

1. Preheat the oven to 325 degrees and line a baking sheet with parchment paper.

2. Add all dry ingredients (reserving the coconut flakes) to a mixing bowl and stir to combine.

3. Heat coconut oil and maple syrup in a saucepan on medium low for a few minutes until combined. Pour over dry ingredients and thoroughly mix.

4. Bake the mixture for 15 minutes. Add coconut flakes to top and bake for an additional 5 minutes monitoring the oven closely -remove the pan when the coconut is golden and fragrant.

5. Let cool, refrigerate until set, break and enjoy with friends! Don't tell them what's in it at first – let's face it it, the ingredient list is a lil' weird. When they reach for a second piece let loose that there's chia seeds in there. Then, quinoa.
